The diet you should follow really depends on what your concerns are with respect to your heart health. In general, a healthy diet that really works for most people and most conditions is a diet that is free of processed food altogether. Low in salt, low in refined carbohydrates, has a healthy balance of macronutrients.
I would not recommend for a moment cutting out carbohydrates in totality, cutting out fat in totality; it just doesn't work, you need a little bit of everything. The key thing here is to make sure that you're getting a good balance, and generally in our diet, we tend to have too much carbohydrate and not enough protein, and I would look to readdress that imbalance.
